Excellent Vegetarian Chili

The best, vegetarian chili I've ever had. It's also my youngest daughter's favorite, as she's a vegetarian.
Ingredients:
1 cup chopped onion
1 cup chopped celery
1 cup chopped green bell pepper
1 garlic clove, minced
1 1/2 cups chopped zucchini
1 (16 ounce) can stewed tomatoes
1 (16 ounce) can whole tomatoes, cut-up
1 (16 ounce) can tomato sauce
1 (1 1/4 ounce) package mccormick mild chili seasoning
2 (16 ounce) cans chili beans, undrained
Directions:
1. Cover bottom of Dutch oven with 3 - 4 tablespoons of water.
2. Add onions, celery, green peppers and garlic.
3. Sauté until wilted (3 to 4 minutes).
4. Add zucchini and cook until tender; (5 - 10 minutes) stirring occasionally.
5. Add remaining ingredients; simmer one hour.
