This is a recipe my sister gave me. She found it in an old cookbook. Just putting it here so I don't lose it! Ingredients:
1 (3 ounce) box jello lemon pudding mix (4 serving size) |
2/3 cup sugar |
2 1/4 cups water |
3 egg yolks |
2 tablespoons lemon juice |
2 tablespoons butter |
3 egg whites |
6 tablespoons sugar |
1 pie shell |
Directions:
1. Mix pudding, 2/3 cup sugar, 1/4 cup water together, then blend in egg yolks and remaining water. 2. Cook over medium heat, stirring until mixture reaches full bubbling boil. 3. Remove from heat, blend in lemon juice and butter. 4. Cool 5 minutes, then pour into your choice of pie shell. 5. Prepare meringue - beat egg whites until foamy, gradually beat in sugar. 6. Top pie with meringue. 7. Bake at 425 degrees for 5 - 10 minutes. 8. Cool 4 hours before cutting. |
