Carrot salad. omit the garlic if you choose. Use 'no salt' in place of salt Ingredients:
2 tbs lemon juice |
2 tbs extra virgin olive oil |
1/4 tsp salt |
1/8 tsp ground pepper |
1 clove of garlic, minced |
2 cups of shredded carrots |
3 tbs fresh dill, chopped (or other fresh herb, basil etc) |
2 tbs scallions, chopped |
Directions:
1. whisk lemon juice, olive oil, garlic, salt and pepper in a large bowl 2. add carrots, dill, and scallions. toss to coat |
