Easy to make and delicious. It has no egg in it, so these cookies are good for people with egg allergies. Ingredients:
2/3 cup dark brown sugar |
1/3 cup ripe mashed banana |
1/2 cup butter |
1/2 teaspoon banana extract or 1/2 teaspoon rum extract |
3/4 cup flour |
1 cup quick-cooking oats |
1/2 cup sweetened flaked coconut |
1/2 cup golden raisin |
1/2 cup chopped walnuts |
1 teaspoon baking powder |
1/4 teaspoon cinnamon |
1/8 teaspoon nutmeg |
1 dash ginger |
Directions:
1. Beat first 4 ingredients until blended. 2. Sift dry ingredients and add to wet ingredients and stir with a whisk. 3. Add oats, coconut, raisins and walnuts. 4. Drop dough by tablespoonfuls onto baking sheet. 5. Bake at 350 degrees for 19 minutes. 6. Cool. |
