A Mediterranean-inspired rendition of pasta salad, this is beautiful with bow-tie pasta, roasted red peppers, olives and artichokes. A dressing blend of Dijon and mayonnaise completes the flavour sensation. Ingredients:
6 artichoke hearts, quartered |
1/2 cup pitted and sliced black olives |
3/4 cup roasted red peppers, chopped |
1/2 stalk celery, diced |
2 tsp dijon mustard |
1/4 cup mayonnaise |
2 tbsp sweet chili sauce |
1 tsp black pepper |
1/4 tsp crushed red pepper flakes |
1/4 tsp garlic powder |
2 cups cooked whole-wheat bow-tie pasta, warm |
Directions:
1. Mix all ingredients but pasta in a small bowl. 2. Place pasta in serving dish, pour dressing over and toss well. 3. Place in refrigerator for a minimum of 3 hours. 4. Toss well before serving. |
