My mom got this recipe when we lived in Tasmania, Australia from her friend Etta Donaldson. My dad and her husband, John taught together at the University of Tasmania. Etta was a very beautiful Scottish woman, with 4 boisterous children. Her eldest Jane and I were good friends. Sadly, I have lost touch with the family, but I have very fond memories of watching Australian Rules football games, and running around in their big back yard. Ingredients:
1 lb sausage |
1 lb ground beef |
1 onion, chopped |
1 cup cabbage, shredded |
1/2 cup carrot, grated |
1 tablespoon rolled oats |
1 egg, beaten |
1/4 cup tomato sauce |
1/2 teaspoon oregano |
1/2 teaspoon basil |
1 teaspoon dried parsley |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 1/4 cups tomato sauce or 1 1/4 cups tomato paste |
1 1/4 cups water |
1/2 cup vinegar |
1 tablespoon mustard |
3 tablespoons brown sugar |
1 tablespoon chili powder |
3 tablespoons worcestershire sauce |
Directions:
1. Meat Loaf:. 2. Mix all ingredients. Press into 9x5 loaf pan. Bake in moderate oven for 1 1/4 hours. Serve with barbecue sauce. 3. Barbecue Sauce:. 4. Mix all together and serve with meat loaf. Also good with pork chops. |
