Ethel's Honey-Mustard Chicken |

Ethel was one of our women in our Sewing Bee, she passed away recently, she was a young 93. I made this chicken dish to take to the dinner following her memorial service. She gave this to me years ago. Easy to make, and very tasty. We usually throw a few potatoes into the oven before starting the dish, and cook some tiny garden peas at the end. Ingredients:
6 -8 chicken thighs |
2 onions (chopped) |
1/2 cup honey (wild) |
2/3 cup whole grain mustard |
1 teaspoon coleman's dry mustard |
1 teaspoon ground ginger |
1 teaspoon worcestershire sauce |
1 teaspoon soy sauce |
Directions:
1. Arrange chicken in baking dish. 2. Put chopped onion over chicken. 3. Mix remaining ingredients and pour over chicken. 4. Bake at 350 degrees for about 1 hour. 5. Serve. |
