Ester's Vegan Cranberry Oatmeal Loaf

A warm and yummy bread...or is it a cake...perfect for guests.
Ingredients:
2 tablespoons ground flax seeds
1/2 cup oil
1/2 cup sugar
1 teaspoon vanilla
1 cup hot water
1/2 cup orange juice
1/2 cup dried cranberries
1 1/2 cups whole wheat flour
1/2 cup oats
1 teaspoon baking powder
1 pinch salt
Directions:
1. Mix first 7 ingredients and let sit until cranberries begin to plump.
2. Add last 4 ingredients and mix well.
3. Pour into an ungreased baking dish and bake for 1 hour or until done in the center.
4. Enjoy.
