Ester's Vegan Cranberry Oatmeal Loaf |

A warm and yummy bread...or is it a cake...perfect for guests. Ingredients:
2 tablespoons ground flax seeds |
1/2 cup oil |
1/2 cup sugar |
1 teaspoon vanilla |
1 cup hot water |
1/2 cup orange juice |
1/2 cup dried cranberries |
1 1/2 cups whole wheat flour |
1/2 cup oats |
1 teaspoon baking powder |
1 pinch salt |
Directions:
1. Mix first 7 ingredients and let sit until cranberries begin to plump. 2. Add last 4 ingredients and mix well. 3. Pour into an ungreased baking dish and bake for 1 hour or until done in the center. 4. Enjoy. |
