I have not tried this but to me it sounds awesome. I love pears. It comes from an estate sale that I purchased a few yera ago. The card indicates this recipe is dated 1952. Ingredients:
2 tablespoons plus 1/4 cup all purpose flour divided |
1 tablespoon granulated sugar |
1 teaspoon grated lemon peel divided |
5 cups sliced peeled ripe pears |
1/2 cup old-fashioned oats |
1/4 cup packed brown sugar |
1/8 teaspoon ground cardamom |
3 tablespoons cold butter |
1/4 cup sliced almonds |
lemon sauce |
1/4 cup sugar |
2 teaspoons cornstarch |
1/2 cup cold water |
1 egg yolk beaten |
1 tablespoon butter |
1 tablespoon lemon juice |
1/4 teaspoon grated lemon peel |
Directions:
1. In large bowl combine 2 tablespoons flour, sugar and 1/4 teaspoon lemon peel. 2. Add pears then gently toss to coat. 3. Transfer to a greased square baking dish. 4. Combine oats, brown sugar, cardamom, remaining flour and lemon peel then mix well. 5. Cut in butter until mixture resembles coarse crumbs then stir in almonds. 6. Sprinkle over pears and bake at 375 for 40 minutes. 7. For lemon sauce combine sugar and cornstarch in saucepan. 8. Gradually stir in water until smooth. 9. Stir in egg yolk, butter, lemon juice and lemon peel and cook for 3 minutes longer. |
