Estate Sale Purchased Japanese Bean Salad |

I have not tried this recipe yet. I intend to. It came from an estate sale that I purchased last summer and it really sounds good to me. If anybody tries it please let me know. Ingredients:
2 cups dried adzuki beans |
1 tablespoon rice wine vinegar |
1 tablespoon minced garlic |
4 tablespoons minced red onion |
1 tablespoon grape seed oil |
1 sheet nori toasted and crumbled |
Directions:
1. Rinse beans then place in pot with water to cover by 2 inches. 2. Bring to boil then partly cover and simmer for 2 hours. 3. Let cool then stir in vinegar, garlic, onion, oil and nori. 4. Serve at room temperature or chill for one hour. |
