Estate Sale Purchased Japanese Bean Salad

I have not tried this recipe yet. I intend to. It came from an estate sale that I purchased last summer and it really sounds good to me. If anybody tries it please let me know.
Ingredients:
2 cups dried adzuki beans
1 tablespoon rice wine vinegar
1 tablespoon minced garlic
4 tablespoons minced red onion
1 tablespoon grape seed oil
1 sheet nori toasted and crumbled
Directions:
1. Rinse beans then place in pot with water to cover by 2 inches.
2. Bring to boil then partly cover and simmer for 2 hours.
3. Let cool then stir in vinegar, garlic, onion, oil and nori.
4. Serve at room temperature or chill for one hour.
