The essential tomato sauce, used for untold numbers of Italian dishes. See also Essential Becciamella Sauce. Serve as is over cooked pasta or include in lasagna or over stuffed shells. Ingredients:
2 tbl extra virgin olive oil |
1/2 c minced onion |
2 cloves garlic, peeled, minced |
28 oz can crushed tomatoes |
4 tbl tomato paste |
1 tsp dried oregano |
1 tbl sugar |
salt |
black pepper, ground |
Directions:
1. Heat olive oil in a heavy sauce pan 2. Saute onions until soft and brown around edges 3. Saute garlic for 1 minute 4. Add crushed tomatoes, tomato paste, oregano and sugar 5. Mix thoroughly 6. Salt and pepper to taste 7. Simmer for 15-20 minutes to fully meld flavors |
