Essense Of Cabbage Soup

This soup has an unusual taste combination. I've had this recipe for a long time and don't recall where I originally found it. We like it as a light yet filling meal with some crusty bread.
Ingredients:
4 strips of bacon, diced
1 small cabbage, about 1 1/2 pounds, quartered, cored and diced
4 green onions, sliced, greens included
2 tablespoons of fresh ginger root, minced
5 cups of chicken stock or vegetable broth
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
minced fresh chives or green onion tops
Directions:
1. Cook the bacon in a large sauce pan until transparent but not brown.
2. Add the cabbage, green onions, and ginger root; saute 5 minutes until crisp-tender.
3. Stir in the chicken broth.
4. Simmer for 40 minutes, or until the cabbage is tender.
5. Add salt and pepper.
6. Taste and adjust seasoning, if desired.
7. Ladle soup in to bowls and garnish each serving with the chives.
