He serves with grilled quail but says it goes well with any grilled meat. Times are a guess. Ingredients:
6 cups chicken stock |
2 roma tomatoes, cut in half |
1/2 yellow onion, chopped |
1 inch fresh ginger, peeled and chopped |
3 garlic cloves, smashed |
1 1/2 cups tomato juice |
2 tablespoons molasses |
3 tablespoons brown sugar |
1/2 cup espresso beans |
3 chipotle chiles in adobo |
salt and pepper |
Directions:
1. Add all the ingredients to a sauce pan on high heat and bring to a boil. Reduce heat and simmer until reduced by about half and then strain. |
