These are delicious with a cup of coffee in the morning. Yummy!! Ingredients:
2 cups unbleached all-purpose flour |
1/4 cup instant espresso coffee powder |
1 tablespoon baking powder |
1 teaspoon ground cinnamon |
1 teaspoon salt |
1 cup milk |
3/4 cup packed light brown sugar |
1/2 cup unsalted butter, melted |
2 eggs |
1 teaspoon vanilla extract |
1/2 cup semi-sweet chocolate chips |
Directions:
1. Grease muffin cups with non-stick cooking spray or butter. 2. In a large mixing bowl, add the flour, espresso coffee powder, baking powder, cinnamon, and salt; stir to combine. 3. In another bowl, add the milk, brown sugar, melted butter, eggs, and vanilla; whisk until smooth. 4. Add the liquid ingredients to the dry ingredients; stir just until moistened; do not overmix. 5. Pour batter evenly into muffin cups. 6. Sprinkle chocolate chips over each muffin. 7. Bake at 400 degrees for 20-22 minutes or until pick comes out clean. 8. Cool on a wire rack before removing from the pan. |
