Escarole soup Ingredients:
2 quarts water |
2 heads escarole |
3 cloves garlic |
2 tbsp extra virgin olive oil |
Directions:
1. Wash escarole well. Put escarole in large pot, and add enough water to cover. Bring to a boil, escarole will cook down so there will be enough room to stir. Add garlic and olive oil. Let simmer for 1 hour or to taste. |
