Ersatz Thai-fried Noodles |

This is a knock-off of Street Noodles that (I am led to believe) street vendors flog in the busy areas of Thai cities. Ingredients:
1 lb chinese noodles |
1/4 teaspoon crushed red pepper flakes |
1/4 teaspoon ground black pepper |
2 chicken breasts, sliced |
3 cloves garlic, crushed |
1 tablespoon sugar (or equivalent artificial sweetener) |
1 tablespoon sesame oil |
1 tablespoon tomato ketchup |
2 -3 green onions, chopped |
1/2 teaspoon tamari soy sauce |
4 ounces peanuts or 4 ounces cashews, coarsely chopped |
1/2 cup fresh cilantro, chopped (or equivalent dried cilantro) |
1 ( ) bean sprouts (or other vegetable sprouts) |
thin lemon slice |
Directions:
1. Prepare noodles according to package directions, and set aside. 2. Heat oil and sauté chicken until cooked. 3. Add garlic, sugar, ketchup, onions and tamari sauce. 4. Using chopsticks or two forks, mix the chicken and noodles, and then add the peanuts or cashews and cilantro. 5. Garnish with sprouts and lemon. |
