Besides the Oyster dish.. this was another favorite of my grandmother's recipes. It's my favorite pie. Ingredients:
9 inch unbaked pie shell |
zest of 2 lemons |
1-1/2 cups sugar |
4 eggs |
1/4 cup milk (she used whole milk) |
1/3 cup fresh lemon juice |
2 tbsp cornstarch |
1 tbsp flour |
1/4 cup melted butter |
Directions:
1. Preheat oven to 350 F 2. Combine lemon zest, sugar, and eggs. Beat well. 3. Add remaining ingredients and mix well. 4. Pour into unbaked pie shell. 5. Bake on the lower rack, 30 to 45 minutes until knife inserted in the center comes out clean. 6. Remove and cool on wire rack, then place in refrigerator for at least 2 hours. |
