Makes a beautiful looking dish that is filling and tastes wonderful. I love eating this one whenever I get the chance.
Ingredients:
2 eggs, scrambled
shredded cheese (preferably a mixture of cheddar and another milder cheese, such as mozarella)
chopped white onion (i like a few slices of green as well, but it's all up to taste)
large leaf of lettuce
cooked, chopped sausage
cooked, broken bacon pieces
approx. 1/2 chopped tomato
big dallop of sour cream
large thin tortilla, preferably green spinach form
Directions:
1. There are no accurate measurements for this delicious recipe. I like to use the large green tortillas from Publix. I am not a big
2. Spinach fan; however, this form of tortilla seems catered for this dish. Simply lay the lettuce flat on the tortilla and then top with eggs. From a frying pan, take the cooked, crumbled sausage and bacon (optional on the bacon), onions, melted cheese and toss on top of the egg mixture. Finish with chopped tomatoes and sour cream.
