Breakfast all baked in a cookie. Great for camping, hiking, or meals on the run. Also makes a nutritious snack.
Ingredients:
2/3 cup butter (not margarine)
2/3 cup sugar
1 egg
1 tsp. vanilla extract
1 cup flour
1/2 tsp. baking soda
1/2 tsp. salt
1-1/2 cups oats
1 cup shredded cheddar cheese
1/2 cup chopped nuts
6 slices (1/3 lb.) crispy cooked bacon, crumbled.
Directions:
1. Beat butter, sugar, egg & vanilla in mixing bowl with electric mixer.
2. Combine flour, soda, salt, oats, cheese, nuts, bacon in separate bowl with spoon.
3. Add dry mixture to creamed mixture till blended.
4. Drop by teaspoonful on a lightly greased cookie sheet, about 1 apart.
5. Bake at 350 degrees for 15 minutes or until lightly browned. Remove to a cool plate.
6. Serve with cold milk or juice.
7. These freeze well for a month or so.
