Ingredients:
8 lbs boneless pork roast
1 1/2 gallons water
4 tablespoons salt
4 tablespoons sugar
1 garlic clove
2 bay leaves
5 peppercorns
dried thyme
3 red onions (chopped)
butter
2 cups honey
2 cups balsamic vinegar
1/2 lb butter
Directions:
1. .Bring Water, salt, sugar, garlic, cloves, bay leaves, peppercorn, & thyme to a boil. Let cool and Marinade pork for 12 to 24 hours.
2. Roast pork at 350 degrees for 2 to 2 1/2 hours until done to your liking.
3. Make sauce:.
4. caramelize onions in butter, add honey, balsamic vinegar reduce until slightly thickened and stir in 1/2 lb butter.
