This is a delicious Summer Salad perfect for BBQ's, a snack or even Dinner. Great to eat with slices of bread or Cuban Crackers. You can substitute grilled fish or chicken for the eggs. Ingredients:
2 eggs |
1/2 avocado |
1 small red onion |
1 large tomato |
optional ingredients |
sweet potato |
black beans |
plantains |
artichoke |
radish |
cucumber |
mango |
papaya |
pineapple |
mozzarella balls |
salad dressing |
lemon juice and/or lime juice |
olive oil |
crushed garlic |
oregano |
salt |
pepper |
cumin |
Directions:
1. Hard Boil the eggs 2. Grill or Bake extra ingredients (sweet potato, pineapple, artichoke, plantain, etc) 3. Whisk all the Salad Dressing Ingredients together 4. Slice the Eggs, Avocado and Onion into strips 5. Slice tomato 6. Mix all the ingredients together 7. Pour the Salad Dressing Over the Vegetables/Fruit/Eggs |
