This is the perfect holiday treat. My family has been making it for years. Humidity plays a key role in making this candy. If the air is humid, the candy will fail. be sure to use real butter, not margarine. Also if possible use premium chocolate from a candy store. Ingredients:
1 lb salted butter |
2 cups sugar |
2 tablespoons light corn syrup |
6 tablespoons water |
1 (8 ounce) bag whole pecans |
1 (8 ounce) bag chopped pecans |
1 lb dipping chocolate |
Directions:
1. Spread whole pecans on cookie sheet. 2. In a HEAVY saucepan, slowly melt butter over low heat. 3. Slowly add sugar, corn syrup, and water. 4. Cook until candy thermometer reads 300F, about 1 hour. 5. Stir constantly to avoid burning the candy. 6. Pour candy over pecans on cookie sheet. 7. In a double boiler, melt half of the dipping chocolate. 8. Sprinkle with half the chopped pecans. 9. When chocolate is set, turn and repeat. 10. When fully set, break into pieces. |
