I love nothing better than a fine recipe for English Peas! Serve with beef dishes and for the Holidays! Enjoy! :) Ingredients:
* 2 cups of fresh english peas (frozen will work, too. just be sure to thaw first. look for petite peas at the store.) |
* 4 tablespoons of butter, divided |
* green leaf lettuce (not iceberg) |
* milk or water if you wish |
* 3 to 4 fresh mint leaves, minced |
* juice of half a lemon |
* salt and pepper to taste |
Directions:
1. To begin, prepare the peas by shelling them from their pods or thawing them if you are using frozen peas. 2. In a medium sized saucepan add enough milk to cover the bottom of the pan about 1/4 inch deep. **Water can be used in place of the milk.** 3. Line the bottom of the pan with a single layer of lettuce leaves. 4. It is okay if the leaves overlap. 5. Add the peas and 1 tablespoon of butter. 6. Cover the peas and butter with a second layer of lettuce leaves. 7. Cook over low heat until the liquid begins to bubble. 8. Continue cooking for another 5 to 10 minutes until peas are “crisp tender.” 9. While the peas are cooking melt 3 tablespoons of butter in a separate saucepan. 10. Squeeze in the juice of half a lemon. 11. Add the mint, steamed peas and salt and pepper to taste. |
