English Onion Soup With Sage And Chedder |

This dish is a good old hearty one for a cold winter night in front of the fire. Ingredients:
knob of butter |
fresh sage |
6 cloves of garlic, peeled & crushed |
5 red onions,peeled & sliced |
3 large white onions, peeled & sliced |
3 shallots, peeled & sliced |
300g leeks, trimmed & sliced |
sea salt & ground black pepper |
2 litres stock |
8 slices of bread |
200g freshly grated chedder cheese |
worcester sauce |
olive oil |
Directions:
1. Put butter, 2 glugs olive oil,sage & garlic in a pan 2. Stir, add onions, shallots & leeks 3. Season with salt & pepper 4. Place lid ajar, cook slowly for 50 mins, without colouring veg 5. Remove lid for the last 20 mins 6. When onions & leeks are silky, add stock, bring to the boil & simmer for 10-15 mins 7. Preheat oven or grill, toast bread on both sides 8. Check the correct seasoning of soup & serve 9. Tear toasted bread over each bowl to fit like a lid 10. Sprinkle with grated cheese & Worcester sauce 11. Dress your reserved safe leaves with some olive oil & place on bread 12. Place bowls in oven to melt cheese & serve |
