English Cucumbers With Garlic And Yogurt Sauce |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Overton Estate in Dallas, Texas in 1992. Ingredients:
2 english cucumbers, peeled |
2 cups plain low-fat yogurt |
2 garlic cloves, peeled and crushed with a pinch of salt |
3 teaspoons dried mint, crumbled and pressed through a sieve |
1 teaspoon olive oil |
sprigs of fresh mint for garnish |
Directions:
1. Finely dice cucumbers. 2. In medium bowl combine yogurt, garlic and 3/4-teaspoon salt. 3. Add diced cucumber and dried mint then blend well. 4. Cover and refrigerate until well chilled about 1 hour. 5. Drizzle with the olive oil and sprigs of fresh mint to serve. |
