English Baked Rice Pudding |

I love rice pudding. the vanilla sugar makes this great. Ingredients:
5 cups milk |
2 tbsp cream |
1 cup shor grain rice |
1 oz vanilla sugar (insert a vanilla bean pod into a jar of granulated sugar, screw on the lid) |
grated peel of 1/2 lemon |
1/2 tsp nutmeg |
Directions:
1. heat the milk and cream but do not boil. spray a casserole dish with cooking spray. Mix the rice with the milk and pour into the dish. Let stand for 20 minutes. stir in the sugar and lemon peel and sprinkle the top with nutmeg. Bake in a preheated oven at 300 degrees for 2 hours. Stir well every half an hour. |
