Anna from the London food blog Baking for Britain feels duty-bound to honour British apples as soon as they hit the shops. And this time, she draws in some pre-industrial culinary history.these [regional] cakes were cooked to fuel the workers during the hard manual labour, and some were produced to be enjoyed as part of post-harvesting celebrations. Read more . Before industrialisation, bringing in the harvest would be muscle-wrenching, dirty, hot and exhausting; our boys and girls in the fields needed all the calories they could get, and hearty apple pies and cakes went a long way in providing strength and sustenance for them. Ingredients:
1 tbsp butter |
1 1/2 lbs tart apples |
1/4 teaspoon nutmeg |
1/4 teaspoon cinnamon |
1/4 cup brown sugar |
2 eggs |
1/2 cup whole milk |
1/2 cup flour |
2 tbsp sugar |
1/4 tsp |
1 tsp sugar additional |
Directions:
1. Preheat the oven to 450F. 2. Spoon 1 tablespoon butter into a large, oven-proof skillet and let it melt in the oven. 3. Melt 2 tablespoons butter over medium heat in a second large skillet. 4. Peel, core and thinly slice 3 tart apples (about 1-1/2 pounds), adding to the skillet as they’re prepped. 5. Once all the apples are in, cook about 5 minutes, stirring occasionally. 6. Stir in 1/4 cup brown sugar, 1/4 teaspoon nutmeg and 1/4 teaspoon cinnamon. 7. Cover and cook for about 10 minutes, until soft and syrupy. 8. Once cooked, reduce heat to low to keep warm. 9. While the apples cook, mix 2 eggs, 1/2 cup whole milk (low-fat milk doesn’t work), 1/2 cup flour, 2 tablespoons sugar and 1/4 teaspoon salt with a hand mixer or in a blender. 10. Spread the butter around the first skillet and up the sides, then pour the batter in. 11. Sprinkle with another 1 tablespoon sugar. 12. Bake for 15 minutes, watching through the oven window; when it puffs up, 13. puncture with a fork. 14. Reduce the temperature to 350F and bake for another 10 minutes. Remove from oven and transfer to plates. 15. Top with warm apple mixture and serve. |
