This is my cooking teacher, Manjuali's, recipe. Very refreshing! I don't use as much salt as she calls for, so you may want to add that to taste. Ingredients:
2 cups mung bean sprouts |
2 cups tomatoes, chopped |
2 cups cucumbers, chopped |
1/4 cup peanuts, crushed |
1/4 cup flax seed |
1/4 cup fresh frozen coconut, grated |
1 cup golden raisin |
2 tablespoons lime juice |
1/4 teaspoon black salt |
2 tablespoons salt |
1/2 cup cilantro, chopped |
1/4 cup sunflower seeds |
Directions:
1. Mix all ingredients and serve chilled. |
