Energy Boost Oatmeal Porridge Breakfast |

This fast easy breakfast is a twist on the boring old oatmeal, great for winter mornings, and getting a energy fix before going out to play in the snow. Ingredients:
1 cup of rolled oats(whole) |
half a cup of rolled spelt |
2 tablespoons sultanas |
4 dried apricots chopped |
4 dried prunes chopped |
2 tablespoons walnuts(hazelnuts) roughly chopped |
1 grated apple |
boiled water from the kettle |
milk or rice milk or soy milk, which ever you prefer...or none of them |
Directions:
1. Put all dry ingredients and grated apple into a saucepan. 2. Pour boiling water over it all, until it is just covered, and let it sit for a couple of minutes with the lid on the saucepan, it will absorb some of the water. 3. Add milk of preference.... or water, until the mix is barely covered again. 4. place the saucepan on a high heat and stir until it boils. 5. Reduce the heat and simmer, stirring occasionally for a couple of minutes until it thickens up. 6. Serve hot (it will thicken more as it cools) .......I like to pour a bit of cold milk over my serving. |
