Energizing Bacon and Egg Burrito |

A good breakfast dish to get your day started quickly once in a while. Somewhat high in sodium. Ingredients:
1 large egg |
2 ounce of turkey bacon, chopped and nitrate free |
1/4 cup onion, chopped |
2 tbsp tomato, chopped and seeded |
1 whole wheat tortilla, sprouted |
1 tablespoon light cheddar cheese |
2 tsp taco sauce |
Directions:
1. beat egg 2. spray skillet with a spritz of olive oil 3. cook over medium heat. 4. Return to heat and add the bacon. Cook for about 2 minutes, stirring occasionally. 5. Add the chopped onion. Cook for 1 to 2 minutes or until the bacon crisps. 6. Add the chopped tomato. Cook for 1 minute or until the tomato is heated. 7. Transfer the mixture to a covered bowl, and set aside. 8. Place the tortilla in the skillet. Cook for 30 seconds per side, or until warm. |
