Using the same recipe, you may prepare leeks, fennel, zucchini, and cauliflower, mushrooms, etc., au gratin. Ingredients:
8 to 10 endives |
8 ounces package low-fat cream cheese |
2 egg yolks |
4 tablespoons grated swiss cheese |
salt and pepper to taste |
Directions:
1. Preheat the oven to 325°F. 2. Steam endives. 3. Beat egg yolks with cream cheese and 3/4 of the grated Swiss cheese, salt, and pepper. 4. Place endives in an ovenproof dish and cover with the mixture. 5. Sprinkle with the remaining grated cheese. Cover the dish and cook for 25-30 minutes. |
