Endive Spears with Stilton Cheese, Toasted Pecans and Sautéed Pears |

Ingredients:
3 tablespoon(s) butter |
2 tablespoon(s) sugar |
2 pears peeled and diced |
2 clove(s) garlic chopped |
1 tablespoon(s) balsamic vinegar |
1 teaspoon(s) salt check saltiness of cheese first |
1 teaspoon(s) freshly ground black pepper |
1/4 cup(s) extra virgin olive oil add slowly, less than 1/4 may be better |
3/4 cup(s) stilton blue cheese crumbled |
25 endive spears |
1/2 cup(s) pecan halves or pieces toasted |
1 cup(s) cream cheese for presentation |
Directions:
1. In a large sauté pan, over medium heat, add the butter and sugar. Add the diced pears and cook until well caramelized, approx. 8 mins. 2. In a small bowl, whisk together the garlic, vinegar, salt, pepper and olive oil. Add mixture to the Stilton. Assemble the spears 1 by 1, starting with the blue cheese then the sautéed pear and topping off with a toasted pecan. 3. Arrange the spears on a plate by first making a small mound of cream cheese and then sticking each spear into the cream cheese in a floral, 3-dimensional pattern |
