Endive Leaves With Ratatouille

Ingredients:
cooking spray
1 small eggplant, cut in 1/2 inch cubes
1 small zucchini, diced
2 small tomatoes, diced
1 small onion, diced
1/4 cup fresh thyme, chopped
3 garlic cloves, minced
black pepper
40 large belgian endive, leaves
Directions:
1. Spray a large saucepan with cooking spray; add vegetables and saute 5 minutes.
2. Add thyme and garlic. Cover and cook over low heat until tender, about 10 minutes, stirring occasionally.
3. Season to taste with pepper. Cool.
4. Spoon vegetable mixture into endive leaves. Arrange filled leaves in a fan pattern on a large platter.
