My mother-in-law gave me this recipe. It can be spiced up or down depending on your taste buds. It can also be microwaved or baked (saving time), and it can be frozen. It is a perfect dish for pot lucks too!
Ingredients:
1 lb ground beef
1 medium onion, chopped
1 (4 ounce) can diced green chilies
1 (10 1/2 ounce) can cream of mushroom soup
1 cup milk
3 tablespoons taco sauce
2 cups shredded cheddar cheese
10 flour tortillas
Directions:
1. Brown beef and onion together; drain meat mixture.
2. Add half of the chilies, cream of mushroom soup, milk and taco sauce to meat mixture. Simmer for 10 minutes.
3. Quarter tortilla shells and line the bottom and sides of a 9 x 9 baking dish with tortillas.
4. Place half of meat mixture on tortilla shells; cover with 1 cup cheese.
5. Place remaining tortilla shells on top of mixture; put rest of meat mixture on top of shells and cover with cheese again.
6. Either bake in the oven at 350 degrees for 30 minutes OR microwave for 10 minutes. (Baking tastes better, but microwave is definitely easier.).
7. Serve by itself or with tortilla chips to scoop up the yummy mixture! Remaining chilies can be placed on top after baking for more flavor!
