Ingredients:
vegetable oil |
12 corn tortillas |
4 cups chili sauce, with meat if desired |
1 lb grated monterey jack cheese |
1 cup finely chopped onion |
Directions:
1. Heat the oil and lightly fry tortillas until softened. 2. Drain on paper towels. 3. Assemble enchiladas on ovenproof plates or baking sheet. 4. Spread 2 tablespoons chili on tortilla. 5. Sprinkle with grated cheese and onion. 6. Add another tortilla, more chili, cheese and onion. 7. Set a third tortilla on top. 8. Spread chili sauce on that, followed by grated cheese. 9. Heat in moderate oven just long enough to melt cheese. |
