Yep, you read right ... it's made with Ritz crackers. Sounds weird, tastes wonderful! This is a family favorite (it's my dad's request for every birthday dinner). Ingredients:
1 1/2 lbs ground beef |
30 -40 ritz crackers, 1 1/2 stacks (crushed) |
1 (2 1/4 ounce) can sliced olives |
1 chopped yellow onion |
1 tablespoon butter |
1 lb shredded cheddar cheese |
2 tablespoons flour |
3 (8 ounce) cans tomato sauce |
2 (8 ounce) cans water |
0.333 (10 1/16 ounce) can enchilada sauce |
Directions:
1. Brown ground beef (drain fat). Crush Ritz crackers and spread crumbs on bottom of a 9x12 baking pan. Spread ground beef and sprinkle with olives. Saute onion in butter. Add flour and stir. Add sauces and water and simmer 5-10 minutes. Spread over the crackers, beef, and olives and top with cheese. Bake uncovered at 350 degrees for 30 minutes. |
