Very simple casserole adapted from a recipe found in a 1978 Sunset cookbook. Serve with a crisp green salad and you have a great meal. Ingredients:
1 lb ground turkey breast |
1 onion, chopped |
1 tablespoon olive oil |
1 teaspoon salt |
1/4 teaspoon black pepper |
1 tablespoon chili powder |
1 (8 ounce) can tomato sauce |
6 corn tortillas, spread with |
butter or margarine |
1/2 cup black olives, chopped |
1 1/2 cups sharp cheddar cheese, shredded |
1 (14 ounce) can black beans, rinsed and drained |
Directions:
1. Preheat oven to 400. 2. Brown turkey and onion in olive oil. 3. add seasonings and tomato sauce and simmer for 5 minutes. 4. grease a 2-quart casserole. 5. Alternate layers of tortillas, beans meat sauce, olive and cheese. 6. Add water. 7. Cover and bake for 20 minutes, or until heated through. |
