variation of enchilada casserole recipe Ingredients:
1 lb. ground chicken |
1 small onion chopped |
8 flour tortillas |
1 cup reduced fat sour cream |
1/2 cup reduced fat milk |
14 1/2 oz. diced tomatoes |
2 cups canned black beans |
8 oz. lettuce |
1 tsp. oregano |
1 tsp. garlic salt |
1 tsp. pepper |
1 cup cheddar cheese, divided |
Directions:
1. Brown ground chicken and onion together, drain. 2. Add sour cream, tomatoes, milk, black beans, oregano, salt, and pepper. 3. Layer tortillas, ground chicken mixture, lettuce, and cheese. 4. Bake at 375 degrees for 30 minutes. |
