My sister's version of quick & easy enchiladas Ingredients:
1 1/2 lbs ground beef |
1 large onion, chopped |
1 (10 1/2 ounce) can cream of chicken soup |
1 (10 1/2 ounce) can cream of mushroom soup |
8 ounces salsa |
1 (8 ounce) can enchilada sauce |
1 (4 ounce) can black olives, sliced |
1 (8 ounce) package corn tortillas, cut into small pieces (about 12) |
2 cups cheddar cheese, shredded |
Directions:
1. Brown ground beef with onion. 2. Add soups & simmer for 10 minutes. 3. Add salsa & enchilada sauce, stir. 4. Add tortilla pieces & olives, simmer 10 minutes. 5. Place in a greased casserole & bake 30 minutes 350. 6. Sprinkle with shredded cheese & bake an additional 10 minutes. |
