A zesty alternative to white bean Chile. Fast, easy, yummy and healthy. Ingredients:
1 can white beans (or your fav bean) |
8 oz of chicken stock (sub vegetable and this meat free) |
1can of green enchilada sauce |
1 cup of frozen chopped spinach |
Directions:
1. open the cans and combine in sauce pan. 2. add more broth or water to taste. 3. I like to add a bit more hot sauce and garlic. 4. Heat and eat. 5. Taste yummy with some crunchy tortilla or pita chips |
