RED ENCHILADA CASSEROLE Ingredients:
8 ounces beef, ground, 97% lean |
8 corn tortillas |
2 1/4 cups enchilada sauce, red |
1 cup low fat cheddar cheese |
1/2 cup chopped onion |
Directions:
1. BROWN MEAT WITH MINCED ONION, IN 9 X9 CASSEROLE DISH PLACE 4 CORN TORTILLAS POUR ON 1/2 GROUND BEEF POUR 1/2 SAUCE OVER MEAT TOP WITH 1/2 CHEESE, REPEAT. HEAT IN 350 DEGREE OVEN FOR 25-30 MINUTES UNTIL CHEESE MELTED AND SAUCE BUBBLEING AROUND EDGES. 2. SERVE WITH SALAD |
