Delicious chickpea patties or balls, great served in a pocket bread with Emz Lovely Lemon Tahini Sauce and heaped with a salad. Ingredients:
4 cups chickpeas (2 cups soaked for 1 1/2 hours and boiled untill very soft, drained) |
2 -4 garlic cloves, crushed (to suit taste) |
1/2 cup scallion, finely minced |
1/2 cup celery, finely minced |
1/2 teaspoon turmeric, finely ground |
1/4 teaspoon cayenne, finely ground |
1/4 teaspoon black pepper |
1 1/2-2 teaspoons salt (to suit taste) |
2 eggs |
3 tablespoons tahini paste |
3 tablespoons flour (or fine bread crumbs) |
flour, for coating |
oil (for frying) |
Directions:
1. mash the chickpeas well. 2. combine with other ingredients. 3. mix well. 4. with floured hands, make the batter into approx 1 inch balls or patties. 5. dust each one lightly with flour. 6. heat approx 2-inch pool of oil in a heavy skillet to 365 degrees C. 7. deep fry the felafels untill golden. 8. serve and enjoy! |
