This recipe is basically a shortbread recipe and a slow oven is necessary so the biscuits cook firmly and don't crumble. Ingredients:
8 ounces plain flour |
3 ounces caster sugar |
6 ounces butter |
fruit jam, for sandwich filling |
icing, to decorate |
cherries, halves to decorate |
Directions:
1. Mix flour and sugar in a bowl, rub in the butter. 2. Knead well to form a smooth paste. 3. Roll out to about 1/4-inch thickness and cut out round shapes with pastry cutters. 4. Place on a greased baking tray. 5. Cook in a slow 300°- 325° degree oven for about 30 minutes. 6. Once cooled, sandwich 2 biscuits together with strawberry or raspberry jam. 7. Decorate top with icing and half a cherry. |
