This is a favourite recipe of a philipine lady I work with and she gave this recipe so I can make it for her...very cheeky...lol Ingredients:
pastry |
1 c self raising flour |
2 tbsp butter |
4-6 tbsp water |
1 c plain flour |
1 tsp salt |
filling |
500g pork mince |
1 garlic minced |
1/2 c cubed carrots, cooked |
1/2 c peas |
salt n pepper |
2 boiled eggs,sliced |
1 onion, finely chopped |
1 tsp chicken stock power |
1/2 c cubed potatoes, cooked |
oil |
1 c raisins |
Directions:
1. in a bowl mix the sifted flours and salt. Rub in the butter until mix ressembles coarse bread crumbs...Add the water, mixing until the dough forms into a ball ...turn out onto a floured board, and knead lightly, and then roll until paper thin.....cut into rounds 4-5 inches in diameter or depending on the desired size of empanada...place a spoon full of filling on top with 2-3 peices of raisins and a slice of boiled egg....moisten edges with water and fold to make half moons, crimp edges or seal with a fork. 2. Then deep fry in hot oil until golden...crust should be flakey |
