Emeril's Pineapple Batida: Batida de Abacaxi (Emeril Lagasse)

Ingredients:
1 1/2 cups cachaca (brazilian rum), or white rum
3/4 cup pineapple juice
2 tablespoons lemon juice
2 tablespoons simple syrup, (equal amounts sugar and water heated until sugar dissolves), cool
3 cups crushed ice
6 pineapple wedges, garnish
Directions:
1. Combine rum, pineapple juice, lemon juice and simple syrup in a cocktail shaker and shake vigorously. Strain into a cocktail glass over crushed ice. Garnish with pineapple wedge.
