Emeril's Basic Sauce for Lasagna |

This is the sauce Emeril made to go in the 1-2-3 Lasagna recipe. This makes about 10 cups or 1 1/2 quarts of sauce. This makes enough sauce for the lasagna recipe, plus another batch to freeze for later. Ingredients:
2 (28 ounce) cans whole canned tomatoes |
2 tablespoons olive oil |
1 medium yellow onion, chopped (1 1/2 cups) |
2 garlic cloves, minced (1 tsp.) |
1/2 teaspoon salt |
1/2 teaspoon dried basil |
1/2 teaspoon dried oregano |
1/8 teaspoon black pepper |
2 (15 ounce) cans tomato sauce |
3 tablespoons tomato paste |
2 cups water |
1 teaspoon sugar |
Directions:
1. Place the tomatoes in a large bowl and squeeze to break into small pieces; Set aside. 2. In a heavy 5-quart pot, heat the olive oil over medium heat. 3. Add the onions, garlic, salt, basil, oregano and black pepper, and cook, stirring, until soft, 5 minutes. 4. Add the tomatoes, tomato sauce,tomato paste, water, and sugar, stir well, and bring to a simmer. Lower the heat to medium-low, and simmer uncovered for 45 minutes, stirring occasionally. 5. Remove from the heat, and use as needed. |
