Sometimes you just can't account for a combination of flavors that surprise you! Ingredients:
2 tbs gelatin |
1 cup cold water |
1 cup sugar |
1/2 cup water |
1/2 cup vinegar |
1 med size can crushed pineapple, with juice |
1 cup nuts, finely chopped |
1 cup sweet pickles, sliced thin (or diced) |
1/2 cup celery, chopped |
dash onion juice, if desired |
Directions:
1. Dissolve gelatin in cold water and soak 5 minutes. Cook sugar, remaining water and vinegar to a thin syrup. While hot, but not boiling, add gelatin mixture and stir until dissolved. When it begins to set, add pineapple, nuts, pickles, celery and onion juice. Let set for 2 hours. Serve on lettuce bed with mayonnaise. |
