This is such a simple dish and so suited to the modern palate that just about everybody and their cousin has their own version.
Ingredients:
6 eggs
1/2 medium onion, coarsley chopped
1/2 lb soft cheese, grated
4 tablespoons butter, melted
1/2 cup zante raisins (a.k.a. dried currants-zante )
1 tablespoon sugar
1 pastry shells
sage (to taste)
parsley (to tatse)
hyssop (sustitute fresh basil leaves to taste)
poudre douce (to taste)
salt (to taste)
saffron (to taste)
Directions:
1. Grind saffron, mix with butter and set aside.
2. Parboil onions and fresh herbs and drain.
3. Finely chop herbs.
4. Beat eggs and combine with saffron-butter, onions, and remaining ingredients.
5. Pour into pastry shell, and bake at 350°F for one hour.
