This is such a simple dish and so suited to the modern palate that just about everybody and their cousin has their own version. Ingredients:
6 eggs |
1/2 medium onion, coarsley chopped |
1/2 lb soft cheese, grated |
4 tablespoons butter, melted |
1/2 cup zante raisins (a.k.a. dried currants-zante ) |
1 tablespoon sugar |
1 pastry shells |
sage (to taste) |
parsley (to tatse) |
hyssop (sustitute fresh basil leaves to taste) |
poudre douce (to taste) |
salt (to taste) |
saffron (to taste) |
Directions:
1. Grind saffron, mix with butter and set aside. 2. Parboil onions and fresh herbs and drain. 3. Finely chop herbs. 4. Beat eggs and combine with saffron-butter, onions, and remaining ingredients. 5. Pour into pastry shell, and bake at 350°F for one hour. |
