Another Elvis recipe I found today-this one sounds great to me. Features the King's 3 favorite flavors. Ingredients:
2 cups all purpose flour |
3/4 cup sugar |
1 tsp. baking soda |
1/2 tsp. salt |
1 cup mayonnaise |
1-1/3 cups mashed ripe bananas (about 3 medium) |
1 tsp. vanilla extract |
18 milk chocolate kisses |
peanut butter frosting |
1/3 cup creamy peanut butter |
2 cups powdered sugar |
1 tsp. vanilla extract |
3 to 4 tblsp. milk |
milk chocolate chips, optional |
Directions:
1. Cupcakes: 2. In a large bowl, combine the flour, sugar, baking soda and salt. 3. In another bowl, combine the mayonnaise, bananas, and vanilla; 4. stir into dry ingredients just until combined. 5. Spoon 1 Tbsp. batter into each paper-lined muffin cup. 6. Top each with a chocolate kiss, pointed side down. 7. Fill cups two-thirds full with remaining batter. 8. Bake at 350 for 20-25 minutes or until toothpick tests done. 9. Cool for 10 min. before removing from pans to wire racks to cool completely. 10. Frosting: 11. In a large bowl, combine the peanut butter, confectioner's sugar, vanilla and enough milk to achieve spreading consistency. 12. Frost cupcakes. 13. Garnish with chocolate chips, if desired. |
