Elsie's Rhubarb Custard Meringue Pie |

Delicious rhubarb custard pie with the bonus of meringue! Ingredients:
1 pie crust |
3 -4 cups chopped rhubarb |
2 egg yolks |
1 whole egg |
1 cup sugar |
1/8 teaspoon salt |
2 tablespoons flour |
1/4 cup milk |
grated orange peel |
2 egg whites |
1/4 teaspoon cream of tartar |
4 tablespoons sugar |
Directions:
1. Put rhubarb in pie crust. 2. Beat eggs and sugar. Then add in other ingredients. Pour over rhubarb. 3. Bake at 350 for 50-55 minutes. 4. Whip meringue ingredients until stiff peaks form. Spread over pie and bake until peaks are browned. |
